Garbanzo Bean Salad

I suppose the best start to this recipe would be to cook your own garbanzo beans (chick peas).  If you don't have time for that, just buy some canned beans (organic or not - your choice).

Ingredients
  • 2 cans garbanzo beans
  • 2 green onions
  • 1/4 bell pepper (any color)
  • chopped tomatoes  - I like lots, so I'll do cherry tomatoes cut in half or a whole tomato
  • fresh spinach
  • olive oil
  • garlic and chive seasoning
Drain and rinse the beans.  Place in a bowl.

Chop onions, pepper, and tomatoes into bite-sized pieces.  Tear or cut spinach into bite-sized pieces.  Add vegetables to the beans.

I just drizzle olive oil on until the beans are oiled when tossed.  It doesn't take much at all - 2 T maybe.  I love garlic, and fresh garlic would be great with this.  Just add whatever seasonings you like.

Refrigerate for a few hours.  Yummmm.
This is a dish I ate a Good Foods Co-op.  I don't have their actual recipe.  I just decided to try and make my own version.  This is pretty good.  Use as little or as much of the ingredients as you like.

BANANA ICE CREAM

Got this recipe from a friend.  So simple and easy and good.

Peel and slice a banana (for one serving).  Place in an air-tight container; place in freezer until frozen.

Puree frozen banana (may have to let it thaw slightly depending on your food processor/blender) along with a couple teaspoons milk/almond milk.  You can add some vanilla or cinnamon to taste.  Puree until ice cream consistency.  Top with chopped nuts, if desired. 

Tastes like banana ice cream
